Menu Plan Monday - April 18



This week is more of the same - GHLF (gym, homeschool, laundry, finals prep for The Husband). It is starting to get hot here in Southern Louisiana, so our tastes are shifting away from heavy casseroles and more towards fresh, cool meals.

Monday: Chicken and Mushrooms in a Garlic White Wine Sauce, garlic roasted broccoli, herbed baked brown rice

Tuesday: Kale, Sweet Potato and Feta Tart in a Spelt Crust (based on this recipe), field greens tossed with fig balsamic vinegar

Wednesday: Buckwheat Tabbouleh, homemade whole wheat pita and roasted red pepper hummus

Thursday: Slowcooker Red Beans and Rice with Smoked Sausage, tossed salad

Friday: Tequila Lime Flank Steak Fajitas, homemade pico de gallo and guacamole, corn tortillas, cumin and chipotle spiced black beans

Saturday: Chicken Korma , brown basmati rice

  1. Hi! Just found you on MPM! I'm a homechooling mom too. Nice to meet you! Your menu sounds great. Do you have a recipe to share by any chance for your Red Beans and Rice? I've yet to make a good down home version! LOL.

    My red beans and rice is super simple. Dump a 1# bag of dry red beans into your crockpot, top with 1 chopped onion, 1 chopped green pepper, 2 minced garlic cloves and a healthy dose of cajun seasoning (1-2 tsp.). If you want sausage, add 1# of chopped smoked sausage (we like spicy mixed, but I slip smoked turkey sausage in once in awhile as well). Cover with water by 2 inches and cook on high for 5 hours, then on low for another 2-3. I'll post a real recipe in the next few days. :) Enjoy!

  3. good to see you started your blog again. i like looking at your recipes. they are always such an inspiration. the white chocolate chip / macademia nut cookies have become one of my favorites (and dan's, too.) :-)
